Gutli Vegetable: We all like to eat mangoes in summer. Therefore, whenever we feel like eating mango in a different way, we often try some new recipes. Sometimes with ripe mango, sometimes with raw mango, but this time we will make something new not from the mango but from its seeds.

Mango kernel curry is very tasty and delicious. Guthli vegetable sounds strange, but it is very tasty to eat. Let us know how to make mango seed curry.

Ingredients for making kernel vegetable

  • Mango seeds – 9 dried
  • Oil- 1/4 teaspoon
  • Red chilli powder – 1.5 teaspoon
  • Turmeric- 1/4 teaspoon
  • salt to taste
  • Coriander powder- 1/4 teaspoon
  • Coriander – finely chopped
  • Mustard – 1/4 teaspoon
  • Asafoetida- 1/4 teaspoon
  • Cumin- 1/4 teaspoon

Prepare mango kernels to make vegetable like this

  • Before making the vegetable, wash the mango seeds with water.
  • After this, dry it thoroughly in the sun for 1 to 2 days. It has to be dried until it dries and becomes hard.
  • When it dries, break it properly and take out the seeds inside.
  • Clean the peel from its seeds. You have to do this with each kernel.
  • After you peel it, cut it into fine pieces.
  • Then wash it again by adding salt to the water 2 to 3 times.
  • After this, put it in the cooker and cook for 1 to 2 whistles, so that it melts well.
  • When it boils, clean it again with cold water 1 to 2 times.

Recipe to make Mango Kernel Vegetable

  • After preparing the mango kernels, take a pan.
  • Add some oil in it.
  • Now add mustard, cumin, asafoetida and curry leaves to it.
  • Then cook it well. Then add seeds to it and fry in some oil.
  • Now add all the necessary spices in it. And fry the spices for 2 minutes.
  • Now add some water to it, cover it and cook it.
  • Then we will complete it with coriander.
  • Now serve the prepared vegetable with hot roti.
