Veg Dum Biryani Recipe

Ingredients
1 cup rice
1 cup green peas
1 onion
1 carrot
2 potatoes
1 cauliflower
1/2 cup paneer (cottage cheese)
1 tsp red chili powder
1 tsp black pepper
1 tbsp biryani masala
1 bay leaf
1 cinnamon stick
2 green cardamoms
2-3 tbsp oil
1/2 tsp fennel seeds
1/2 tsp cumin seeds
1/2 cup yogurt (curd)
1 tsp ginger-garlic paste
1 star anise
Salt to taste
Water as needed
1/2 cup dry fruits/nuts
2 medium-sized tomatoes
10-12 garlic cloves
2-3 green chilies
1 tsp lemon juice


Method
Begin by cooking the rice in a pressure cooker.


In a large pot, heat some oil.


Add chopped onions and sauté until they soften.


Next, incorporate the bay leaf, cinnamon, cumin seeds, fennel seeds, and cardamom, cooking briefly.


Once the spices are fragrant, mix in the ginger-garlic paste and sauté.


Add the chopped vegetables—carrot, cauliflower, peas, and potatoes—and stir well.


Then, add the paneer cubes and fry until they turn golden brown.


Season with red chili powder, black pepper, salt, and biryani masala.


Stir in the yogurt and let the mixture cook for a few minutes.


Add a splash of water and allow the vegetables to cook thoroughly. Once done, gently fold in the rice.



In a separate pan, heat some oil and sauté thinly sliced onions until crispy.


Remove the fried onions and set aside.


Once the biryani is well combined, top it with the fried onions and dry fruits.
