Prepared with crispy bread, thick rabri and the aroma of saffron-cardamom, this traditional sweet is liked by people of all ages. The good thing is that it can be made very easily at home.

Ingredients needed to make royal icing

  • 8-10 bread slices
  • 1 liter full cream milk
  • 1 cup sugar
  • ½ tsp cardamom powder
  • a pinch of saffron
  • 3-4 tbsp ghee
  • 2 tbsp chopped almonds
  • 2 tbsp chopped pistachios
  • 2 tbsp chopped cashews
  • a little mixed dry fruits
  • If desired, silver work for decoration

Prepare creamy rabri like this

First of all, put milk in a heavy bottomed vessel and boil it on medium flame. Keep stirring occasionally so that the milk does not stick to the bottom. When the milk is reduced to almost half, add sugar, cardamom powder and saffron and mix well. After cooking for a few more minutes, turn off the gas. Your thick and aromatic rabri is ready.

Make the bread golden and crisp

Cut the sides of the bread slices and cut them into triangles or squares. Heat ghee in a pan and fry the bread pieces on low flame till they become golden and crisp from both the sides. If you wish, you can deep fry them, but baking them in light ghee makes the sweets less oily.

Prepare Shahi Tukda like this

First place the crisp bread in the serving plate. Pour prepared thick rabri over it thoroughly, so that the bread absorbs its taste. Now garnish with almonds, pistachios, cashews and other dry fruits.

If you want an even richer taste, you can add some extra rabri and saffron threads on top.
