Lifestyle Desk – With the arrival of the rainy season, one craves hot tea and something spicy to eat. Most people prefer pakodas, samosas, or other fried foods during this season. However, if you’re bored of eating the same breakfast every day and want to try something new, tasty, and healthy, then ‘one-pot pasta soup’ could be a great option for you. This restaurant-style soup is not only delicious but also nutritious. The special thing is that there’s no need to boil pasta separately to make it. All the ingredients are cooked in one pot, which saves time and doubles the taste.
This soup is made with a wonderful blend of garlic, tomatoes, colorful vegetables, Italian herbs, and cheese. Its warming flavor not only soothes the mind during the rainy season, but also provides energy and essential nutrients. Material
Pasta – 1 cup (penne, fusilli or macaroni)
Olive oil or butter – 1 tbsp
Garlic cloves – 4-5 (finely chopped)
Onion – 1 small (finely chopped)
Carrot – 1 (cut into small pieces)
Capsicum – ½ cup (finely chopped)
Sweet corn – ½ cup
Tomato puree – 2 tbsp
Vegetable stock or water – 4 cups
Oregano – ½ tsp
Chilli flakes – ½ tsp
Salt and pepper – to taste
Small pieces of cheese – ½ cup
Coriander or parsley and some grated cheese for garnishing
Method
- First, heat olive oil or butter in a deep pan or wok. Add finely chopped garlic and fry until lightly golden.
- Add the onion and cook until translucent. Then, add the carrots, bell peppers, and sweetcorn, and sauté lightly for 2–3 minutes.
- Add the tomato puree and cook for about two minutes to remove any rawness. Then, add the oregano, chili flakes, salt, and pepper, mixing well. Add the vegetable stock or water and bring to a boil.
- When the mixture comes to a boil, add the uncooked pasta. There’s no need to boil the pasta separately. Cook over medium heat for 10–12 minutes.
- Stir occasionally to prevent the pasta from sticking to the bottom. When the pasta is completely soft, add small pieces of cheese and cook for another 2 minutes.
- After turning off the heat, serve hot, topped with fresh coriander or parsley and a little grated cheese, if desired. Its thick, creamy, and spicy flavor will be loved by everyone.
