In this desi style of Indian breakfast, a combination of sweet corn and cheese is available which can be liked by children as well as adults. Crunchy on the outside and with melted cheese filling on the inside, this paratha may taste like pizza, but it can be easily prepared at home.

Material
Wheat flour-2 cups
Sweet Corn-1 cup
Cheese-1 cup grated
Onion-1 small finely chopped
Green chilli-1-2 finely chopped
Green Coriander – 2 tbsp
Red chilli powder-½ teaspoon
Chili flakes-½ teaspoon
Garam masala-¼ teaspoon
salt-as per taste
water to knead the dough
Ghee or oil for baking paratha
Method
- First of all, take wheat flour in a vessel. Add some salt to it and knead a soft dough with the help of water. Keep the dough covered for about 10-15 minutes.
- Boil the sweet corn for 3-4 minutes. Drain the water and mash the corn lightly. Now add grated cheese, finely chopped onion, green chilli and green coriander.
- Add red chili powder, chili flakes, garam masala and salt as per taste to the filling and mix well. Keep in mind that cheese may already contain salt, so add salt in less quantity.
- Make a medium sized ball of dough and roll it slightly. Place 2-3 spoons of corn-cheese filling in the middle. Close the filling tightly by lifting the edges.
- Now roll it gently and put it on a hot pan. When one side is lightly cooked, turn it and apply ghee or oil on both sides and cook until golden and crisp.
- Take out the prepared Corn Cheese Paratha hot and serve with tomato sauce, green chutney, curd or dip of your choice.
Tips to enhance taste
- Adding finely chopped capsicum to the filling can improve the taste and texture.
- While making for children, keep the quantity of green chillies and chilli flakes less.
- Do not bake the paratha on very high flame, otherwise it may burn from outside and the inside will not melt properly.
- Do not keep too much moisture in the filling, it may cause the paratha to tear while rolling.
