1. Use The Right Ratio Of Flour

2. Knead The Dough With Milk

Do not rely only on water while kneading the dough. Adding a little milk along with water helps make the rotis softer and gives them a lighter colour. This simple trick can make a noticeable difference to the final texture.

3. Let The Dough Rest

Once the dough is kneaded, cover it with a damp cloth and let it rest for at least 30 minutes. Resting allows the gluten to develop, making the dough easier to stretch and roll into thin rotis without tearing.

4. Use An Inverted Tawa

Traditionally, Rumali Roti is cooked on an inverted iron kadai or a special dome-shaped griddle. If you do not have one, simply turn a heavy iron tawa upside down and heat it well over a high flame before cooking the rotis.

5. Sprinkle Salted Water On The Surface

This is one of the easiest tricks for preventing the roti from sticking. Sprinkle a little salted water on the hot cooking surface before placing the roti. If you are using an inverted kadai, lightly grease it first and then sprinkle the salted water.

6. Do Not Overcook The Roti

Take a portion of the dough, dust it with maida and roll it out as thinly as possible. Gently stretch it further by tossing it from one hand to the other. Place it on the hot tawa and cook over medium heat. As soon as light brown spots appear on both sides, remove it from the heat. Overcooking can make the roti hard and dry.

7. Store It In A Cloth

Once cooked, fold the Rumali Roti neatly like a handkerchief and wrap it in a clean cotton cloth. This helps retain moisture and keeps the rotis soft for longer.
