Ingredients for Lauki Muthiya:

- Loki 1, wheat flour 1 cup, jowar flour half cup, gram flour half cup, ginger green chilli paste, Kashmiri red chilli powder, black pepper powder 2 tsp, turmeric powder half tsp, cumin powder half tsp, coriander powder 2 tsp, garam masala half tsp, salt as per taste, celery a big pinch, white sesame seeds half tsp, best soda 1/4 tsp, peanut oil 3 tbsp, lemon juice Half teaspoon, sugar 1 tablespoon, green coriander a handful, oil (for greasing)

- Ingredients for tempering: Oil 2 tbsp, Mustard seeds 1 tsp, Sesame seeds 2 tsp, Curry leaves a handful, Green chilli one, Asafoetida half tsp, Coriander a handful
How to make Lauki Muthiya

- First of all, peel the bottle gourd thoroughly, then grate the bottle gourd. Take a bowl and squeeze the grated bottle gourd little by little to remove the water, and pour it into another bowl.

- Mix wheat flour, jowar flour and gram flour in the squeezed bottle gourd and also add ginger-green chilli paste. Add all the ground spices, salt, crushed celery, white sesame seeds, baking soda, peanut oil, lemon juice, sugar and fresh coriander. Mix everything well and knead to form a dough.

- Now put water in a steamer and let it boil. Grease the steaming tray with oil. Now divide the dough into several parts, roll them and then place them in a steamer and let them steam for 20-25 minutes. After steaming for 20 minutes, remove the lid and check that the muthia is cooked well. Let them cool completely, then cut them into pieces with a knife.

- Now heat oil in a pan and temper it with sesame seeds, curry leaves, chopped green chillies and asafoetida. Now add muthia to it and mix well. When it is mixed, turn off the gas and add lemon juice and fresh coriander and mix well. Delicious muthiya is ready. Serve it with green coriander chutney.
