Vanilla Sponge Cake – 1 small
Whipping Cream – 1 cup
Powdered sugar – 1 to 2 tablespoons
Milk – ½ cup
Rose water – 1 tsp
Cardamom powder – ¼ tsp
Saffron – 5-6 threads
Pistachios – 2 tbsp
Almonds – 1 tablespoon

for garnishing

Motichoor Laddus – 1
Pistachio shavings – 1 tablespoon

Method

  1. Put whipping cream in a cold bowl. Add powdered sugar to it and beat it with an electric beater until the cream thickens and starts forming soft peaks. Keep the prepared cream in the refrigerator for some time.
  2. Take milk in a bowl. Add rose water, cardamom powder and saffron in it and mix well. Keep it for 5 minutes, so that the color and aroma of saffron gets absorbed into the milk properly.
  3. Mash 4 Motichoor laddus lightly with hands and break them into small pieces. Keep in mind that do not make them a paste at all, so that the taste and texture of the laddu remains in the pastry.
  4. Cut the sponge cake into slices of equal thickness. Place one slice on a plate or tray and apply some prepared saffron milk on it.
  5. Now apply a thick layer of whipped cream on the cake. Add crumbled motichoor laddu and some chopped pistachios and almonds on top of it.
  6. Place the second slice of cake on top of it and then apply a little milk. Spread cream again and put Motichoor laddu on top. Similarly prepare 2-3 layers.
  7. Apply a good layer of cream on the top. After this, decorate the pastry with small pieces of Motichoor Laddus, pistachio shavings, almonds and some saffron.
  8. Refrigerate the prepared pastry for at least 1-2 hours. This will set the pastry well and its taste will also increase.
