Ingredients to make Dum Aloo
Potatoes (small size) – 1 kg
Chopped tomatoes – 4 cups
Chopped onions – 2 cups
Cinnamon – 2 pieces
Fresh cream – 2 tbsp
Sugar – 1/2 tsp
Cardamom – 2-3
Green chilli – 3-4
Fennel – 2 tsp
Turmeric – 1/2 tsp
Garlic – 8-10 cloves
Cumin – 1 tsp
Cloves – 4-5
Green Coriander – 2-3 tbsp
Kashmiri red chilli – 5-6
Cashew pieces – 1/2 cup
Oil – as per need
Salt – as per taste
How to make Dum Aloo
To make Punjabi style Dum Aloo, first cut tomato, onion, green chilli and green coriander leaves into pieces. Now add tomato pieces and 3 cups of water in a pan and heat it on medium flame. After cooking the tomatoes for 10-15 minutes, turn off the gas and let it cool.
Now put the boiled tomatoes in the mixer jar and grind it to prepare a soft puree. Similarly, cut onion into pieces and prepare their paste with the help of mixer. Now put some oil in a pan and heat it. When the oil becomes hot, add cardamom, cinnamon and cloves and fry for a few seconds.
Add prepared onion paste to it and fry for 1 to 2 minutes. After this, add tomato puree to it, mix it and let it cook for 2 to 3 minutes on medium flame. Now add sugar, fresh cream and salt as per taste in the gravy and mix well.
After this, let the gravy cook for 1-2 more minutes. After this, add coriander and cook on low flame. Before this, put potatoes in oil and fry them for 1-2 minutes. Add these fried potatoes to the gravy and cover the pan and let the vegetable cook for 3-4 minutes. After this turn off the gas. Flavorful Punjabi style Dum Aloo is ready. Serve it with roti, paratha or naan.
