2 cups flour
1 tablespoon baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup cold unsalted butter, cut into small pieces
– 3/4 cup cold buttermilk (or use plain milk with 1 tablespoon lemon juice or vinegar)
1 tablespoon honey (optional, to sweeten)
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
2. Mix flour, baking powder, baking soda and salt together in a large bowl.
3. Add cold chopped butter to the flour mixture. Using a pastry cutter, fork, or your fingers, mix the butter into the flour to form a coarse crumb mixture.
4. In a separate small bowl or measuring cup, combine the cold buttermilk and honey (if necessary) and whisk well.
5. Make a well in the center of the flour mixture and add the buttermilk mixture into it. Using a spatula or wooden stick, mix the mixture until it begins to form a dough.
6. Turn the dough out onto a lightly floured surface. Does not crush easily.
7. Pat the dough into a rectangle 1/2 to 3/4 inch thick. Using a flared biscuit cutter or glass, cut out dough balls. Place on the prepared baking sheet, keeping them close to where the freshness lies.
