Beetroot and Sweet Potato Tartare Recipe

2 beetroot

2 avocados

2 teaspoons lemon juice

salt as required

1 sweet potato

2 teaspoons virgin olive oil

1 teaspoon finely chopped red onion

ground black pepper as required

Step 1

Prepare the beetroot by washing, cutting and steaming. There is no need to peel them. Cut them into quarters and steam them in a steamer basket over a pot of boiling water. While the beets are steaming, peel the sweet potatoes and cut them into small pieces.

Step 2

Check the softness of the beetroots by inserting a knife, they should become completely soft. When the beets are ready, remove them from the steamer basket and add the sweet potatoes to the steamer.

Remove the sweet potatoes from the steamer basket and let cool.

When the beets have cooled, rub them with a paper towel to peel them and then cut them into very small cubes. Mix the beetroot with chopped red onion and add 2 teaspoons olive oil, 1 teaspoon lemon juice and salt and pepper to taste.

Step 5

Cut the avocado and add 1 teaspoon lemon juice and mix.

Step 6

Make your tart by piling avocado, sweet potatoes and beets into a shallow cup and turning it upside down on a plate. Alternatively, cut off both ends of an aluminum can and use it as a mold. Depending on the size of your mold you should be able to make 3 – 4 tartars.

Step 7

Garnish each with Dijon mustard and a dollop of sprouts. Serve immediately.
