  • 65g smoked pancetta
  • 100g dry spaghetti
  • Four egg yolks
  • Two and a half tbsp grated Parmesan
  • Good pinch black pepper
  • Eight pigs in blankets, cooked
Method

Cook the pasta, drain and keep a tablespoon of pasta water aside. In the meantime fry the pancetta on a medium heat in a pan for a few minutes until crispy and browned.

Mix the egg yolks with two tablespoons of grated parmesan and a generous pinch of black pepper. Mix in the reserved pasta water.

Add the cooked spaghetti to the pan with the pancetta, making sure the heat is turned off. Mix in the egg yolks and parmesan mixture until fully combined.

Serve with the pigs in blankets and the remaining parmesan sprinkled over the top.
