Carrot Kheer: There is one sweet dish which is definitely prepared in everyone's house during the cold season and that is carrot halwa. Everyone likes carrot halwa, and because good carrots are available only in winter for four months of the year, everyone definitely tastes it. But if you too are bored of eating carrot halwa, then try carrot kheer this time. This also looks very tasty and wonderful and if you like Gajar Ka Halwa then you will definitely like Hajar Ki Kheer too. Let us know the recipe of making carrot kheer.

Material

  • Carrot-500 grams (grated)
  • Milk-2 liters
  • Sugar-1 cup
  • Chopped almonds – 1/2 cup
  • Chopped cashews – 1/4 cup
  • Raisins-10 to 12
  • Cardamom powder-1/2 tsp
  • Large cardamom seeds – 2 to 3
  • Saffron threads – 2 to 3
  • Ghee- one tablespoon

Method (Carrot Kheer)

1- To make carrot kheer, first of all heat some ghee in a non-stick pan and add grated carrots and fry them till they turn golden. While roasting it, be very careful about the flame of the gas, the carrots should not stick.

2-Now pour milk in a big vessel and boil it. And put this roasted carrot in the boiling milk. Now add sugar and cardamom powder and mix well.

3-Now cook on low flame until the milk thickens and the carrots are completely cooked. Finally add chopped almonds, cashews, raisins and saffron threads and mix.

4- Serve hot carrot kheer garnished with chopped almonds and cashews. If you want, you can also add khoya to the kheer, this will make the kheer even more delicious.
