Green onion – 1/2 kg
Potato – 2
Tomato – 2
Green chilli – 2-3
Garlic – 5-6 cloves
Ginger – 1/2 inch piece
Turmeric – 1 tsp
Red chilli powder – 1 tsp
Garam masala – 1/2 tsp
Coriander powder – 1 tsp
Fenugreek seeds – 1/2 tsp
Green coriander leaves – 1-2 tbsp
Oil – 2 tbsp
Salt – as per taste
– First of all, clean the potatoes and green onions and cut them into small pieces. After this, chop ginger, garlic, green chilli and green coriander finely.
– Now put oil in a pan and keep it to heat on medium flame. After the oil is hot, add fenugreek seeds and fry for a few seconds.
– After fenugreek seeds turn brown, add turmeric, ginger, garlic, green chillies in the pan and stir. After frying them for some time, put the chopped potatoes in the pan and cook.
Fry the potatoes while stirring and when the potatoes become soft, add chopped green onions and mix well with the help of a spoon and let the vegetables cook.
Now cover the pan and let the vegetables fry for some time. Stir the vegetables after some time and then add red chilli, coriander powder and garam masala and mix.
Now cut the tomatoes and add them to the vegetable and cook while stirring. After this, mix salt in the vegetables. Now cover the vegetable again and let it cook for some time.
– When potatoes, onions and tomatoes become soft, remove the lid from the pan and add green coriander leaves and turn off the gas. Green onion curry is ready.
