Mary Berry's quick and easy sticky toffee pudding recipe is a perfect dessert for your New Year's Day feast. This delicious dish can be prepared in advance, making it a convenient option for busy hosts.

Unlike traditional recipes that require soaking and blending dates, this version skips those steps without compromising on taste. From Mary Berry Everyday, this recipe serves six and can be whipped up in less than 30 minutes, with an additional 30 minutes to one hour of cooking time.

You'll need a 1.7-litre (3-pint) ovenproof dish and an electric whisk. The sauce can also be made up to three days in advance and stored in the fridge until needed, reports .

Ingredients

  • 100g butter, softened, plus extra for greasing
  • 175g muscovado sugar
  • Two large free-range eggs
  • 225g self-raising flour
  • One tsp baking powder
  • One tsp bicarbonate of soda
  • Three tbsp black treacle
  • 275ml full-fat milk
  • Double cream or vanilla ice cream, to serve

For the sauce

  • 100g butter
  • 125g light muscovado sugar
  • One tbsp black treacle
  • 300ml pouring double cream
  • One tsp vanilla extract

Method

Preheat the oven to 180°C (160°C fan) or Gas Mark 4. Grease a wide, shallow 1.7-litre (3-pint) ovenproof dish with butter.

In a large mixing bowl, combine the butter, sugar, eggs, flour, baking powder, bicarbonate of soda, and treacle. Use an electric whisk to beat the mixture for about 30 seconds, or until the ingredients are well incorporated.

Gradually add the milk, continuing to whisk until the batter is smooth and fully combined. Pour the batter into the prepared dish and bake for 35–40 minutes, or until the pudding has risen and springs back when gently pressed in the centre.

To prepare the sauce, combine all the ingredients in a saucepan and heat gently, stirring until the sugar dissolves and the butter melts. Turn up the heat and bring the mixture to a boil, stirring constantly for a minute.

Once the pudding is ready, drizzle half of the sauce over it in the dish. Serve with a generous dollop of cream or ice cream for an ultimate indulgent dessert.
