Ingredients for Tomato Rice
Cooked rice – 2 cups
Tomato finely chopped- 2
Onion finely chopped- 1
Ginger paste – 1/2 tsp
Chana dal – 1/2 tsp
Urad dal – 1/2 tsp
Green chilli – 1
Mustard – 1 tsp
Cumin – 1 tsp
Fenugreek seeds – 1/4 tsp
Cinnamon – 1 inch piece
Cloves – 3-4
Turmeric – 1/4 tsp
Kashmiri red chilli powder – 1/2 tsp
Coriander powder – 1/2 tsp
Chopped cashew nuts – 1 tablespoon
Curry leaves – 1 tbsp
Chopped mint leaves – 2 tbsp
Green coriander chopped – 2 tbsp
Oil – 1-2 tbsp
Salt – as per taste
Tomato Rice Recipe
To make tomato rice full of taste, first cut mint leaves and green coriander leaves into fine pieces. After this, cut cashew nuts into pieces. Now add 2 tbsp oil in a pan and heat it. After the oil is hot, add mustard seeds, cumin seeds, gram dal, urad dal and fry. After a few seconds, add fenugreek seeds and curry leaves to the pan and fry. After this, add cashew pieces to the pan and fry them until they turn golden brown.
Now finely chop the onion and add it to the pan and fry on medium flame until it turns light brown. After this, add green chilli and ginger paste in the pan and fry while stirring with a spoon. After this, add fine pieces of tomato in the pan and cook till it becomes soft. Once the tomatoes become soft, add turmeric, red chilli powder, coriander powder, mint leaves and salt as per taste and cook while mixing.
When all the ingredients of the pan are cooked well, add cooked rice to it and cook while stirring with a spoon. Now cover the pan and cook the rice for 5 minutes. During this time, keep stirring the rice with a spoon from time to time. After this turn off the gas. Delicious tomato rice is ready. It can be served with chutney or curd.
