Ingredients to make Crispy Potato Kachori
1 cup flour
2 spoons semolina
salt to taste
2 spoons ghee
Water
boiled potatoes
2 chopped green chillies
Ginger
1 teaspoon coriander powder
cumin powder
1 teaspoon turmeric powder
garam masala
1 teaspoon dry mango powder
green coriander

How to make Potato Shortbread
First of all, add 1 cup flour, 2 tablespoons semolina, salt and 2 teaspoons ghee in a large vessel.
Mix all this well. Then knead the dough by adding water little by little. The dough should neither be too hard nor too soft.
After kneading the dough well, cover it with a wet cloth for 10-15 minutes. This will set the dough and make good kachoris.
Mash the boiled potatoes well.
Now heat some oil in a pan. Add chopped green chillies and ginger and fry a little.
Then add coriander powder, cumin powder, turmeric powder, garam masala, dry mango powder and salt and mix well.
Now add mashed potatoes to it and mix well with all the spices.
Finally add chopped green coriander and mix the mixture well. Potato mixture is ready. Let it cool for a while.
Now make small balls from the kneaded dough.
Press the dough with your palm and fill the boiled potato mixture in the middle. Keep in mind that do not fill the mixture too much, otherwise the kachori will not be able to close properly.
Now close the dough carefully and make a round or small ball. Then roll this ball with a rolling pin and give it the shape of a small kachori.
Heat oil in a pan. When the oil is well heated, slowly add the kachoris.
Fry the kachoris on medium flame so that they cook well from inside and become crispy from outside.
Now your crispy potato kachori is ready. Serve it to children with delicious green chutney or tomato sauce.
