400 grams condensed milk
12 tablespoons melted unsalted butter
4 teaspoon gelatin
1/2 cup pineapple juice
100 grams curd
200 grams digestive biscuits
2 cups fresh cream Step 1 Crush the biscuits and prepare the cheesecake base
To start, take a large bowl and add digestive biscuits into it. Crush these biscuits coarsely with your hands and then add melted butter to it. Mix well using a spoon. Meanwhile, grease a cake tin and pour the biscuit mixture. Use a spoon to flatten the mixture tightly and refrigerate for about 20 minutes to set the cheesecake base.
Step 2 Prepare the pineapple juice and gelatin mixture
Now, place a large bowl on medium heat and add water into it. Let the water boil. Meanwhile, take a small bowl and mix pineapple juice and gelatin in it. Place this bowl of juice into a large bowl to melt the gelatin using the double-boiler method. Stir the gelatin mixture continuously until it is completely dissolved.
Step 3 Make the Pineapple Cream Mixture
Now, take a small bowl and add condensed milk, hung curd along with chopped pineapple pieces and mix well. Then add prepared gelatin mixture into it. Crush the pineapple and mix all the ingredients with a blender. Now, take another bowl and add fresh cream into it. Using a whisker, whip the cream until it becomes soft and creamy. Add this to the bowl of curd-pineapple mixture. Again, use the whisker and mix all the ingredients well.
Step 4 Spread the cream mixture on the cheesecake base and refrigerate for 2-3 hours
Now, take out the cake tin and spread this cream mixture evenly on the biscuit base. Put pineapple pieces on top of it and keep the cake tin in the fridge for about 2-3 hours. This will set the cheesecake. After the cake is set, take it out and cut it into slices. Serve immediately!
