Material (Palak uttapam recipe)
- Semolina – 1 cup
- Spinach – 1/2 cup (finely chopped)
- Curd – 1/2 cup
- Water – 1/4 cup
- Baking soda – 1 tsp
- Salt – 1/2 teaspoon
- Green Coriander – 1 tsp
- Rye – 1/2 teaspoon
- Cumin – 1/2 teaspoon
- Ginger – 1/2 teaspoon (grated)
- Oil – 1/2 teaspoon
- Turmeric – 1/4 teaspoon (optional)

Method (Palak uttapam recipe)
- Add semolina, curd and water to a vessel and mix well. Now leave it for 10-15 minutes so that the semolina swells well. If the batter looks slightly thick, you can add some more water.
- Now add finely chopped spinach, coriander, turmeric (optional), ginger and salt to this batter and mix well.
- Heat a griddle or non-stick griddle and add some oil to it. When the oil is hot, add mustard seeds and cumin seeds and let it fall. Then put this tempering in the batter and mix well.
- Now put some oil on the pan and spread the mixture in small parts. Cover it and let it cook on low flame for 2-3 minutes. Then turn over and cook till it becomes light golden from the other side.
Spinach uttapam is ready. Serve hot with sauce or sauce.
