Recipe for Bundi Laddu:

Material:

  1. Besan – 2 cups
  2. Sugar – 1 ½ cup (as per taste)
  3. Water – 1 cup (to make boondi)
  4. Ghee – 1 ½ cup (to fry boondi)
  5. Cardamom Powder – ½ tsp
  6. Saffron-5-6 threads (optional)
  7. Drought nuts (almonds, cashews, pistachios) – ½ cup (chopped)
  8. Colored syrup (optional)
  9. A pinch of salt

Method:

  1. To make Bundi:

    • First of all add gram flour and salt in a large pot. Gently add water to it and make a thick and soft solution.
    • Add cardamom powder and saffron to the solution, then mix well.
    • Heat ghee in a pan. Now use a special spoon of a Jhari (Jhal) or Bundi to make Bundi.
    • Put a little gram flour solution in the jahari and let it filter in ghee. Bundi will be fried in round shape.
    • When Bundi becomes golden and crispy, take it out and keep it in a plate. Make a boondi in the same way with the rest of the solution.
  2. To make sugar syrup:

    • Add sugar and water to a small pan. Leave it to boil and cook till the sugar dissolves.
    • When the syrup becomes slightly thick (a wire syrup), turn off the gas.
    • Add a little cardamom powder to the syrup and mix.
  3. Laddus making process:

    • Press the fried boondi lightly and add prepared syrup to it. Mix this mixture well.
    • Now add chopped dry fruits and then mix all the things well.
    • When the boondi becomes a little cold and soaked in the syrup, then make it in the shape of laddus with your hands.
    • Make all boondi laddus.
  4. To serve:

    • Serve these laddus after cooling. You can eat them even after an hour, they are very tasty.

Tip: Place laddus in airtight container to maintain freshness for a long time.
