Originating from Hanoi, this iconic dish features fried fish marinated in turmeric and dill. Typically, firm white fish such as catfish, cod, or tilapia is used, and it is marinated in a flavorful blend of shallots, galangal, turmeric, garlic, shrimp paste, fish sauce, and oil.
One of Hanoi’s oldest restaurants, La Vong, has been serving this dish for nearly 150 years.
Diners gather around a communal table, where a skillet is set up over a burner. Turmeric-marinated fish is added to sizzling garlic oil, and dill and shrimp paste tossed in. The diners’ job is to add herbs, marinated hot chilies, peanuts and vermicelli, which are all laid out on the table.
A serving of La Vong’s fried catfish is priced at VND175,000 (US$7.58) per person.
