Mahashivratri special: How to make traditional Thandai at home

New Delhi: Thandai is a refreshing and flavorful Indian drink traditionally enjoyed during Mahashivratri. It is made with a blend of nuts, seeds, aromatic spices, and saffron-infused milk, making it not only delicious but also rich in health benefits. The word Thandai means “cooling,” making it a perfect choice for beating the summer heat while providing an instant energy boost.

To prepare this drink, almonds, cashews, pistachios, melon seeds, poppy seeds, fennel seeds, and cardamom are soaked and then ground into a smooth paste. This mixture is then combined with chilled milk, sugar, and fragrant rose water, resulting in a creamy, spiced, and indulgent beverage.

Traditional Thandai Recipe

Here is a simple recipe for making refreshing Thandai at home on the auspicious occasion of Mahashivratri:

Ingredients

For the Thandai paste:

  • ¼ cup almonds
  • 2 tbsp cashews
  • 2 tbsp pistachios
  • 2 tbsp melon seeds (magaz)
  • 2 tbsp poppy seeds (khus khus)
  • 1 tbsp fennel seeds (saunf)
  • 6–8 black peppercorns
  • 4 green cardamoms
  • 1 tbsp rose petals (optional)
  • 2 tbsp sugar (adjust to taste)
  • ½ tsp saffron strands (soaked in warm milk)

For the Thandai drink:

  • 4 cups chilled milk
  • 2 tbsp rose water (optional, for extra flavour)
  • Crushed pistachios and saffron for garnish

Instructions

  • Soak the nuts and spices: Soak the almonds, cashews, pistachios, melon seeds, poppy seeds, fennel seeds, peppercorns, and cardamom in water for 3–4 hours or overnight.
  • Make the paste: Drain the water and grind the soaked ingredients into a smooth paste. Add a little sugar and a small amount of milk to aid blending.
  • Mix with milk: Add the prepared paste to the chilled milk, mix well, and refrigerate for at least 30 minutes to allow the flavours to infuse.
  • Strain and serve: Strain the Thandai into glasses, add rose water, garnish with crushed pistachios and saffron, and serve chilled.

Beyond its delightful taste, Thandai is also known for its digestive and cooling properties. Ingredients such as fennel seeds and black pepper aid digestion, while nuts and poppy seeds provide essential nutrients.
