The texture of avocados also undergoes noticeable changes due to freezing. As water within the cells expands, it breaks down the structural integrity of the fruit, resulting in a soft, mushy, and watery consistency upon thawing. This texture makes them less appealing for consumption on their own or in salads.
Additionally, the color of avocados can be impacted by freezing. Naturally, avocados brown when exposed to oxygen—a process that freezing does not prevent, especially since avocados are often cut or mashed before being frozen, increasing their exposure to air.
