Punjabi Style Rajma Masala: Make a taste like dhaba at home

Rajma is a dish that most people like. Its thick, spicy and aromatic taste doubles the fun of eating. If you also want to make Punjabi style Rajma Masala like restaurant or dhaba at home, then this easy recipe is perfect for you.

Material:

1 cup rajma
1 tbsp oil or 3 tablespoons butter
1/2 teaspoon cumin
1 cup finely chopped onion
1 cup finely chopped tomatoes
1 teaspoon coriander powder
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 pinch asafetida
1/2 teaspoon garam masala
1 teaspoon kasoori fenugreek
2 tablespoons chopped coriander leaves
Taste salt
Ginger-garlic-green chili paste

Method of preparation:

Soaking and boiling Rajma

  • Soak Rajma in water overnight.
  • The next day wash it with fresh water and cook it in a pressure cooker for 15-20 minutes.
  • If Rajma is soft then keep it aside.

Prepare the masala

  • Heat oil or butter in a pan, then add cumin seeds and let it crackle.
  • Now add onion and fry till it turns golden brown.
  • Add ginger-garlic-green chili paste and fry well.
  • Then add chopped tomatoes and add spices - coriander powder, red chili, turmeric, garam masala, asafoetida.
  • Allow the spices to cook well until the oil leaves.

Mix Rajma and Spices

  • Now add boiled rajma and mix well.
  • Add water as needed and add salt as per taste.
  • Cook on low flame for 10-12 minutes so that the taste of the spices gets well.
  • Finally add kasuri fenugreek and shake.

Garnishing and serving

  • Garnish the prepared Rajma by adding chopped green coriander.
  • Serve it with hot rice or roti.

Trick to make Rajma even more thick:

If you want your Rajma to be even more thick and tasty, then add boiled rice water. This increases both texture and flavor of gravy.
