Fennel grains – 1 teaspoon
Papad Masala (optional) – 1 teaspoon
Aamchur powder – 1 teaspoon
Celery – 1/2 teaspoon
Asafoetida – 1/4 teaspoon
1. Wash and dry the chillies. Then cut their stalks and make a light incision in the middle so that the masala can be filled.
2. rock salt in a bowl ,. Add turmeric, coriander, cumin, fennel, mangoes, celery and asafoetida and mix. Papad masala can also be added to enhance taste.
3. Fill the prepared spices in chili with light hands so that the chillies are not broken. Leave the stuffed chilies in the open for a while so that the taste of the spices is absorbed in the chillies.
4. Heat oil in a pan. Add a little cumin and fennel to it. After this, add asafetida and stir.
5. Now put spices filled chilies in oil and let it cook on low flame so that the chillies soak the oil well and cook the spices.
6. When the oil is absorbed well in the chillies, then fill them in a glass jar and close them. Keeping the jar in the sun for 3-4 days will make the taste of pickle even better.
