Coconut Barfi is a very tasty dessert. To make it, first heat 1 teaspoon of ghee in a non-stick pan. Add grated coconut to the pan and fry well, but take care that the coconut does not burn. Fry it until its color becomes light golden. After this, add 1/4 cup of water and sugar in a separate pan and make sugar syrup. Heat it on low heat until the sugar dissolves completely and the mixture becomes slightly thick. Now add sugar syrup to the roasted coconut and mix well.
Allow this mixture to cook for 2-3 minutes, so that it becomes slightly thick and starts to stick to each other. If you want, you can also add dry fruits like chopped almonds and cashew nuts. Now put ghee on a tray and keep it aside. Put the mixture in the tray and spread it evenly by pressing it thoroughly. Allow it to cool for a while and then cut it into the shape of your choice. Your coconut barfi is ready.
