Navratri 2025 special: Chef-recommended recipes to try this festive season

New Delhi: Navratri is a time of devotion, fasting, and celebration, where food plays a significant role in maintaining energy levels while adhering to dietary restrictions. With Navratri 2025 approaching, many people are looking for delicious yet sattvik recipes that are nutritious, light, and easy to digest. To help you enjoy the festival while keeping your meals exciting, we bring you some chef-recommended Navratri-special recipes that blend tradition with modern flavours.
Here are two special and super easy recipes by chef Diwas Wadhera, Executive Chef, Eros Hotel, New Delhi, Nehru Placeto prepare at home for a delicious Navratri fasting. Whether you prefer something savoury or have a sweet tooth, there’s a variety of options to explore.
Sweet Potato Soup recipe
Cooking time 40 min, 4 portions
Ingridents
2 tablespoons Butter
1 inch Ginger
1 tsp sendha namak
Black pepper
3 medium sweet potatoes, 1½ pounds, peeled and cubed
1 apple, peeled and chopped
1 teaspoon grated fresh ginger
1 teaspoon chopped coriander
½ teaspoon red chilli
1 teaspoon Lemon
3 to 4 cups veg stock
1 can full-fat coconut milk, reserving ¼ cup for garnish
Steps to prepare:
Heat the oil in a large pot over medium heat.
Add salt and ground pepper and sauté.
Add the sweet potatoes and the apple and cook until they begin to soften, stirring occasionally, about 8 to 10 minutes.
Add the ginger, coriander, and red chili and stir.
Stir in the lemon and then 3 cups of the broth and the coconut milk.
Bring to a boil, cover, and reduce the heat to a simmer.
Cook until the potatoes are tender, 20 to 30 minutes.
Let cool slightly and pour the soup into a blender, working in batches if necessary, and blend until smooth.
If your soup is too thick, add up to 1 cup more broth and blend.
Season to taste and top with a swirl of coconut milk, cilantro, and crushed pepper.
Notes
This soup thickens as it cools. If reheating it, stir in a little water to create a smooth, creamy consistency.
2. Pista Lot
Prep Time 30 minutes, cooking time 5 hours
Ingredients
Pistachio 1 kg
Grain Sugar 800 gms
Green Cardamom Powder 2 Pinch
Silver varq optional
Steps to prepare:
In a Pan, prepare a sugar syrup of Sugar and half the quantity of water; add cardamom powder.
Thicken it to a consistency where balls can be made out of it.
Boil the pistachio separately and then chop it finely.
Mix the pistachios with the thickened sugar syrup.
Now spread it on a steel tray evenly over parchment paper or a greased tray and let it cool for at least 4 hours.
Cut it in the desired shape after it cools down and serve garnished with slivered pistachios/or silver leaves.
