Method of making juicy pumpkin curry:-
You can use any type of pumpkin to make pumpkin vegetable.
First of all wash the pumpkin and separate it from the middle.
Then separate its seeds with the help of a knife. If you want, you can also peel the pumpkin.
After extracting the seeds, cut the pumpkin into small pieces.
Now put the chopped pumpkin in the pressure cooker. Add 2 cups of water, salt and half a teaspoon of turmeric over it.
Now cover the cooker and boil the pumpkin for 2 cents. This vegetable is succulent
Therefore, keep the amount of water good.
Now we will put the pan on the gas and heat it by adding oil.
As soon as the oil is hot, add fenugreek seeds, fennel and cumin seeds.
After this, add asafetida, finely chopped onion and fry it well.
Meanwhile, add curry leaves to it.
When the onion is golden, add ginger garlic paste, chopped tomatoes and mix.
Now cook the mixture on low flame with a lid.
Now add whole red chili, red chili powder and coriander powder to the spices and mix well.
Now cook the spices on low flame for 3-4 minutes, then add the mango powder and pumpkin removed from the cooker.
Now mix the vegetables well, then cover and cook on low flame for about 10 minutes.
