Material (Kacche aam ki kadhi recipe)
- Raw mango – 1 (snatched into small pieces after removing the peel)
- Rice flour – 2 tablespoons
- Asafoetida – 1 pinch
- Turmeric Powder – ½ teaspoon
- Salt – as per taste
- Sugar – 1 to 2 tablespoons
- Water – 2 to 3 cups
- Ghee/Oil – 1 to 2 tablespoons
- Fennel – 1 teaspoon
- Mustard grains – 1 teaspoon
- Hard leaves – 8 to 10
- Red chili powder – ½ teaspoon
- Coriander powder – ½ teaspoon
- Cumin Powder – ½ teaspoon
Method (Kacche aam ki kadhi recipe)
- First of all, peel the raw mango and cut it into small pieces and grind it in a grinder and make a puree.
- Add rice flour and 1 cup of water to a vessel and mix well so that there are no kernels.
- Now add mango puree, turmeric, salt and sugar and mix. Then mix the remaining water and place this mixture on the gas to boil.
- When the mixture starts boiling, let the flame medium and keep stirring continuously so that the dough does not stick in the pot.
- Heat ghee or oil in a pan. Add fennel, mustard seeds, hard leaves and asafoetida to it. Add this tempering to the boiled curry and mix well.
- Now add red chili powder, coriander powder and cumin powder to it. Cook the curry for 2–3 more minutes so that all the spices get well.
- Sour-sweet and delicious raw mango curry is ready. Serve it with hot rice or rotis.
