Ingredients
1.2kg beef roasting joint
One or two tbsp neutral-flavoured oil
One tsp dried thyme
One tsp onion granules
One tsp mustard powder
Method
Remove the beef from the fridge and allow it to reach room temperature, which should take around 20-30 minutes, before starting the cooking process.
Preheat your air fryer to 220C. Coat the beef evenly with oil, ensuring all sides are covered.
In a separate bowl, mix together thyme, onion granules, mustard powder, one teaspoon of salt, and one teaspoon of ground black pepper.
Rub this seasoning mixture thoroughly over the beef. Place the seasoned beef into the air fryer basket and cook for 10 minutes.
After 10 minutes, reduce the temperature to 170C. Continue cooking the beef for an additional 30 to 40 minutes, depending on how you like it cooked - 30 minutes for medium-rare or 40 minutes for medium-well.
Once cooked, transfer the beef to a chopping board, cover it loosely with foil, and let it rest for up to 30 minutes before slicing and serving.
