Rice Kheer is a traditional north Indian dish but is made all over India. It is an essential dessert that many people enjoy during festivals or special occasions. The rich, creamy texture of Rice Kheer is loved by many. Just like other Kheer varieties, Rice Kheer is also quite easy to make, by just slow-cooking the ingredients together in one pan or pot.

Rice Kheer ingredients
Gather these ingredients in the right quantity to make Rice Kheer.
¼ cup basmati rice
1 litre whole milk – 4 cups
6 tablespoons sugar or add as required
½ teaspoon green cardamom powder or 5 to 6 green cardamoms powdered in mortar-pestle(choti elaichi powder)
1 pinch saffron strands or 14 to 16 saffron strands
1 tablespoon chopped or sliced almonds or blanched almonds
1 tablespoon chopped or sliced cashews
1 tablespoon chopped or sliced unsalted pistachios
1 tablespoon golden raisins
How to make Rice Kheer?
Follow these simple steps to prepare rich and creamy Rice Kheer from scratch!

Preparation:
Rinse ¼ cup of basmati rice until the water runs clear.
Soak the rice in water for 15–20 minutes.
Boil water in a small pot, then turn off the heat.
Add 10–12 almonds to the hot water and let them soak for 30 minutes.
Peel and slice the almonds. Set aside.
Cooking Steps:
While the rice is soaking, heat 4 cups of milk in a heavy-bottomed pan on low to medium-low heat.
Stir occasionally to prevent the milk from sticking to the pan.
Bring the milk to a boil.
Take 1 tablespoon of hot milk from the pan, pour it into a small bowl, and mix in a few strands of saffron. Let it steep and set aside.
Once the milk boils, drain the soaked rice and stir it into the hot milk.
Cook the rice on low heat without covering the pan, stirring occasionally.
When the rice is halfway cooked, add sugar to taste. Stir well and continue cooking on low heat until the rice is fully cooked.
Final Touches
Mix in the green cardamom powder, blanched almonds, chopped cashews and pistachios.
Add the saffron-infused milk, stirring gently.
Continue cooking on low heat until the kheer thickens to your preferred consistency. Remember, it will thicken further as it cools.
Turn off the heat, scrape any milk solids from the sides of the pan into the kheer, and add golden raisins.
Optionally, stir in rose water or kewra water for a fragrant finish.
