Prepare melon: First of all, wash and cut the melons thoroughly and remove its kernels. Then cut it into small pieces. Grind the melon pieces well in a grinder so that its taste can come well in the kheer.
Boiling milk: Now put milk in a deep pan and keep it to boil. While boiling the milk, keep stirring it in between so that the milk does not burn. When milk comes to a boil, reduce the heat.
Taste in kheer: When the milk boils well, add sugar to it and dissolve it well. After this, add cardamom powder, chopped cashews, almonds and pistachios to the milk and mix well. Allow this mixture to cook for 10-15 minutes, so that the milk becomes thick.
Pouring a mixture of melons: Now, add melon paste to this boiled milk and mix well. Allow this mixture to cook for 5-10 minutes, so that the taste of melon is absorbed into milk. If you are using Jafran, now add it and cook for a few minutes.
Pour rose water and ghee: Add rose water and ghee to the kheer and mix well. This gives kheer a special fragrance and taste.
Serve after cooling: Your melon pudding is ready. Now you can serve it hot or cold. If you want, you can keep it in the fridge for a few hours to cool down and then serve.
