Material

  • 1 liter full fat milk
  • 1/2 cup sugar
  • 2 tablespoons dry rose petals or 1 tbsp rose water/essence
  • 2 tablespoons rose syrup (like Ruh Afza)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped pistachios
  • 1 tbsp chopped almonds
  • A pinch of saffron threads

Action

  • To make rose kulfi, first put full fat milk in a thick pan and boil it on medium flame.
  • After boiling, reduce the heat and cook until the milk remains half.
  • It will take about 30-45 minutes and the milk will thicken.
  • Now add sugar and cardamom powder to it. Cook for 5-7 minutes until the sugar dissolves completely.
  • Then add dry rose petals or rose water/essence and rose syrup.
  • If using saffron, add saffron mixed milk to the pan and mix well.
  • After this, add chopped pistachios and almonds to the milk mixture.
  • Remove the pan from the heat and let the mixture cool to the room temperature. Then keep it in the fridge for at least 2-3 hours.
  • Put the cold kulfi mixture in kulfi mold or small freezer-saff container or ice pop mold.

  • Keep Kulfi in the fridge for at least 6-8 hours or all night until it becomes hard.
  • Then immerse the mold of Kulfi in water for some time and take Kulfi out of the mold.
  • Remove the kulfi gently and serve immediately.
  • If you want, you can also add chopped fruits and rose petals to it.
