Ingredients:

  • 2 cups green moong sprouts
  • 1 cup gram flour (besan)
  • A handful of bathua leaves or any green vegetable of your choice
  • 1-2 inches of fresh ginger
  • 1 teaspoon red chilli powder
  • 2 teaspoons roasted cumin powder
  • Salt to taste
  • 1 teaspoon baking powder or ENO fruit salt
  • Oil or desi ghee for cooking​

Method:

  1. In a blender, combine the green moong sprouts, gram flour, chopped ginger, and a small amount of water. Blend until you achieve a smooth, batter-like consistency.
  2. Transfer the batter to a mixing bowl. Add red chilli powder, roasted cumin powder, and salt. Mix well to incorporate the spices evenly.
  3. Introduce the chopped bathua leaves (or your chosen greens) into the batter, ensuring they are well-distributed.
  4. Just before cooking, add the baking powder or Eno fruit salt to the batter. Mix gently to retain the airiness, which will help in making the appe fluffy.
  5. Heat the appe pan on medium flame and lightly grease each cavity with oil or desi ghee.
  6. Pour the batter into each cavity, filling them just below the rim. Cover the pan and cook until the base of the appe becomes firm and golden brown.
  7. Using a skewer or fork, gently flip each appe to cook the other side. Continue cooking until both sides are evenly browned.
  8. To ensure they are cooked through, insert a skewer or fork into the centre of an appe; it should come out clean.
  9. Once done, remove the appe from the pan and serve hot with your favourite chutney or sauce.​
