Ingredients:

Serves: 2 | Time: 12 minutes

  • 1 cup thick poha (flattened rice)
  • 1 medium onion, finely chopped
  • 1 green chili, finely chopped
  • 1/4 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/4 cup roasted peanuts
  • 1 tbsp oil (preferably vegetable or peanut oil)
  • Salt to taste
  • A pinch of sugar (optional)
  • Fresh coriander leaves, chopped (for garnish)
  • Juice of half a lemon
  • Curry leaves (optional, about 6–8)

Steps to prepare:

  1. Place the poha in a strainer and rinse under running water for about 10–15 seconds.
  2. In a non-stick pan or kadai, heat oil. Add mustard seeds and let them splutter.
  3. Now, add curry leaves and green chillies and saute well.
  4. Add chopped onions, and saute for 3 minutes.
  5. Mix turmeric powder and roasted peanuts, and let them cook.
  6. Now, gently add the rinsed poha, salt, and a pinch of sugar for added flavour.
  7. Cover the pan with a lid and let it cook for 2 minutes.
  8. Squeeze fresh lemon juice and sprinkle chopped coriander.
  9. Serve hot in a bowl.
