Ganesh utsav special, kaju modak recipe
For outer layer (modak shell)
For filling (filling)
1- First cashew does not need to soak 4-5 hours. Just make a light dry roast or keep it in the freezer for a while so that the oil does not leave while grinding.
2- Now make a fine powder by putting cashew nuts in a grinder. Take care not to become a paste.
3- Add cashew powder and ground sugar to a pan. Fry for 4-5 minutes while stirring on low flame continuously, until the mixture starts coming together.
4- Now add cardamom powder and (if you want) add saffron milk. Turn off the gas and allow the mixture to cool slightly. When the mixture becomes lukewarm, knead it with hand so that the smooth dough is ready.
5- On the other hand, put mawa/khoya in a pan and fry for 2-3 minutes. Now add coconut sawdust, ground sugar and cardamom powder and mix well. Let it cool down.
6- Now prepare small balls by making cashew dough. Make each dough like a cup by pressing it with fingers. Fill a little stuffing in it and give the shape of modak on top. If you have modak mold, you can also use it.
