Ingredients
Boiled Basmati Rice – 3 cups
Cottage Cheese – 250 grams
Cashew Paste – 1/2 cup
Cream – 1/2 cup
Fried Onion Flakes – 1/2 cup
Finely Chopped Onion – 1/2 cup
Desi Ghee – 3 tablespoons
Butter – 2 tablespoons
Almonds – 10
Chopped Green Chillies – 3
Garlic – 5 cloves
Tomato Puree – 1/2 cup
Grated Ginger – 1 tablespoon
Coriander Powder – 1 teaspoon
Turmeric Powder – 1/2 teaspoon
Mint Leaves – 1 tablespoon
Cardamom Powder – 1/2 teaspoon
Cloves – 5
Cinnamon Sticks – 2 pieces
Black Cardamom – 2
Green Cardamom – 5
Black Pepper Powder – 1/4 teaspoon
Salt – to taste
Method (Recipe)
- First, take the paneer and cut it into half-inch pieces. Then, put ghee in a pan and heat it over low heat.
- When the ghee is hot and melted, add the paneer pieces and fry until golden. Once the paneer is fried, remove it to a plate and set it aside.
- Now, add black cardamom, cloves, cinnamon, small cardamom, and black pepper to the remaining ghee and fry for about half a minute.
- Next, add chopped onion, grated ginger, green chilies, and chopped garlic cloves and fry over high heat, stirring occasionally.
- Now, add turmeric, coriander powder, and cardamom powder and mix well. Then, add tomato puree and fry for 4 to 5 minutes.
- Next, add cashew paste, cream, and salt to taste, and mix thoroughly.
- When the mixture is cooked thoroughly and the ghee starts to release, add the fried paneer pieces and let it cook for 10 minutes.
- Then turn off the heat. Place a pot on the stove over low heat and spread a layer of one-third of the boiled rice in it.
- Now spread a layer of half the prepared paneer mixture over this rice. Then, spread another one-third of the boiled rice on top.
- Now, again, spread a layer of the remaining paneer mixture over the rice. Finally, spread the remaining rice on top.
- Next, fry the onion slices and spread them evenly over the top layer of rice. Then, sprinkle mint and coriander leaves over the biryani.
- Then, pour butter over the pan, cover the pot, and cook the biryani on very low heat for 10 to 15 minutes.
- Then, turn off the gas and remove the lid from the biryani. The Makhani Paneer Biryani is ready. Serve hot with raita.
