Sitaphal Rabri Making Ingredients:

Sitaphal-2, milk-500 ml, sugar-3-4 tablespoons, cardamom powder-1/2 tsp, saffron 1-2 strands, pistachio-badam to decorate

Method of making Sitaphal Rabri

    • First of all, wash Sitaphal thoroughly and remove its peel. Then take out its seeds and take the pulp out in a bowl. Keep in mind that the seeds do not remain, because they will not be used in Rabri.

       

 

    • Put milk in a pan and keep it on medium flame to boil. Boil the milk until it becomes half and it becomes a little thick. Stir continuously with a spoon so that the milk does not burn. If you like light rabri, do not thicken milk too much. You can also keep it a little thin

       

 

    • Make a puree well in the grinder. This puree will make the taste of rabri thick and creamy. When the milk boils and thickens, add the puree of Sitaphal and mix it well. Let it boil for 5-7 minutes so that the taste of Sitaphal and milk is mixed well.

       

 

    • Now add sugar to the milk and sprinkle cardamom powder. If you are using saffron, then add it to the milk and mix it well. Boil it for a while with sugar and cardamom. Boil Rabri until it becomes creamy and thick. Keep in mind that keep stirring it continuously so that rabri does not burn.

       

 

    • When the rabri is ready, take it out in a small bowl. You can decorate with finely chopped pistachios and almonds. If you want, you can cool it in the fridge for a while or you can also serve lukewarm.
