When fasting during Navratri, satisfying your sweet cravings while maintaining energy can be a challenge. Singhara Halwa (Water Chestnut Flour Pudding) is the perfect solution—it’s a delicious, quick, and energy-dense sweet treat that complies with falahar (fasting diet) rules.

Made from water chestnut flour, which is easily digestible and highly nutritious, this halwa gives you sustained energy to keep you going throughout your fast.


 

Ingredients You Will Need (Falahari)

Singhara Atta (Water Chestnut Flour) 1 cup Easily available at grocery stores.
Ghee (Clarified Butter) 1/2 cup Use pure desi ghee for the best flavor.
Sugar (or Jaggery Powder) 1/2 cup Adjust quantity to your sweetness preference.
Water (or Milk) 2 cups Water is generally preferred for a clearer texture.
Cardamom Powder (Elaichi) 1/2 teaspoon For fragrance and flavor.
Dry Fruits (Almonds, Cashews) 2 tablespoons Roughly chopped for garnish.

 

Step-by-Step Recipe Instructions

 

 

Step 1: Roast the Flour

 

  1. Heat the ghee in a thick-bottomed pan or kadai over medium heat.
  2. Add the Singhara Atta to the melted ghee.
  3. Roast the flour on low to medium heat, stirring continuously. This step is crucial; the roasting process should take about 8-10 minutes until the flour turns a light brown color and releases a nutty, aromatic smell. Be careful not to burn it.

 

Step 2: Prepare the Syrup

 

  1. While the flour is roasting, heat the water (or milk) in a separate pot.
  2. Add the sugar and the cardamom powder to the water. Bring it to a boil and stir until the sugar is completely dissolved. Keep this syrup hot.

 

Step 3: Combine and Cook

 

  1. Once the flour is perfectly roasted, reduce the heat to low.
  2. Slowly pour the hot sugar syrup into the roasted flour mixture, stirring vigorously and continuously to prevent lumps from forming.
  3. The mixture will immediately thicken. Continue to stir until the halwa pulls away from the sides of the pan and the ghee starts to separate. This indicates the halwa is cooked.

 

Step 4: Garnish and Serve

 

  1. Remove the halwa from the heat.
  2. Garnish with chopped dry fruits and serve it warm.
