Sago-1 cup (soaked, 4-5 hours)
Rice (Varai) of Sama – ½ cup (soaked)
Curd – ½ cup (not fresh and sour)
Rock salt – as per taste
Ginger – 1 teaspoon (grated)
Green Chilli-1-2 (finely chopped)
Lemon juice – 1 teaspoon
Sugar – 1 teaspoon (for balance)
Ino Fruit Salt – 1 tsp (or ½ tsp baking soda + ½ lemon)
Oil – 1 teaspoon (to apply temper)
Curry leaves, cumin, green chillies (for tempering)
1-Grind coarsely sago and Sama rice in a grinder and grind it coarsely. This paste should be more thick.
2-Now add curd, rock salt, green chillies, ginger, lemon juice and sugar to this paste. Mix well If needed, add some water, but keep the batter as thick like Dhokla.
3-Better, before making the son, add ino fruit salt to it and mix lightly with hand. The batter will bloom.
4-Grease a plate or dhokla tray. Put the prepared batter in it and steam in a hot steamer for 15-20 minutes. Check by adding toothpick – If it comes out clean, Dhokla is ready.
5-Heat the oil in a small pan, add cumin, curry leaves and green chillies and apply it on the prepared dhokla, then cut it into pieces and serve it with green chutney or curd.
