These palak vadas can be made very quickly on your home chatter, on a rainy or cold winter afternoon, or for a small function. Crispy on the outside and soft on the inside, these vadas are a delight when eaten with chai or spicy chutney. Materials:

  • Fresh spinach – 2 cups (finely chopped)
  • Gram flour – 1 cup
  • Rice flour – 2 tbsp
  • Finely chopped onion – 1
  • Green Chillies – 2 (finely chopped)
  • Ginger-garlic paste – 1 tsp
  • Coriander-cumin powder – 1 tsp
  • Red Chilli – 1 tsp
  • Turmeric – ¼ tsp
  • Salt – as per taste
  • Little water (to make the mixture)
  • Oil – for frying

Action:

  • Wash and finely chop the spinach. Remove excess water from it.
  • In a bowl, add gram flour, rice flour, salt, turmeric, red chillies, ginger-garlic paste, coriander-cumin powder and onion.
  • Now add chopped spinach and green chillies and mix everything well.
  • Add water little by little to make a thick batter mixture. Do not dilute the mixture too much.
  • Heat oil in a pan. Oil should be hot on medium flame.
  • Drop the mixture in the oil little by little with your hands or a spoon and fry until golden brown on both sides.
  • Remove the fried vadas on a tissue paper to remove the excess oil.
  • Serve hot with green chutney, tomato sauce or masala chai.
  • Add some semolina to the mixture if you want to make the vadas more crispy.
  • A healthy version can also be prepared by frying in a large air fryer.
