Black gram – 1 cup
Bay leaf – 1
Onion – 1, finely chopped
Turmeric – 1/2 teaspoon
Hing – a pinch
Cumin seeds – 1 teaspoon
Ginger-garlic paste – 1 tablespoon
Cumin powder – 1/2 teaspoon
Tomatoes – 2
Red chilli powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Coriander powder – 1 tablespoon
Salt – to taste
Amchur powder – 1/2 teaspoon
Oil – 3 tablespoons
Water – as needed
Step 1- First, prepare the chana masala. To do this, wash the chickpeas and soak them in a bowl of water overnight. Strain the water and place the chickpeas in a pressure cooker. Add water and cook for 3-4 whistles.
Step 2- After that, heat a pan and add 3 tablespoons of oil. Add asafoetida, cumin seeds, and bay leaves. Then, add finely chopped onion and ginger-garlic paste and sauté.
Step 3- Now, put the chopped tomatoes in a mixer jar and grind them. Then, add this paste to the pan. Then, add turmeric, coriander powder, red chilli powder, cumin powder, and dry mango powder.
Step 4- Now add garam masala and salt, mix well, and then cook the spices well. Then add the cooked chickpeas and mix well. Cover and cook for a while. Then add finely chopped coriander leaves and serve.
