Carrot Barfi Recipe: During cold season, good and fresh carrots are available in the market and eating it is very beneficial for health. Therefore, it must be consumed in some form or the other. Although the most favorite dish made from carrots is carrot halwa, many other delicious things can also be made from it, which provide the benefits of carrots. Today we will tell you an easy recipe for making carrot barfi. Let us know how to make it.

Carrot Barfi Recipe

Material

  • Carrot – 3 cups (cut into small cubes)
  • Full cream milk – 1 cup
  • Milk powder – 1 cup
  • Sugar – ¾ cup
  • Desi ghee – 4 tbsp
  • Cardamom powder – ½ tsp
  • Dry fruits (cashews, almonds, pistachios) – finely chopped

Method (Carrot Barfi Recipe)

  • Add chopped carrots and milk in cooker or pan. Cook for two whistles or until the carrots become completely soft.
  • When the carrots cool down, put them in the mixer and make a coarse or smooth paste, as per your choice of texture.
  • Heat ghee in a pan. Add carrot paste to it and fry on medium flame for 5 to 7 minutes while stirring continuously. Now add milk powder and sugar to it and mix well.
  • When the mixture thickens and starts leaving the pan, add cardamom powder and dry fruits to it.
  • Apply ghee in a plate and spread the prepared mixture in it. Add dry fruits on top and press lightly. When it cools down, cut it into desired shapes.
