Be it cow, goat or camel, the milk of almost every animal appears white, whereas the milk of buffalo has a slight yellow tint. After all, what is the reason behind this?
The white color of milk is not due to any magic, but due to its texture. There is a special protein called casein in milk. This protein combines with calcium and phosphate to form very small particles, which are called micelles. When light falls on these particles, it scatters in different directions. This scattered light makes milk appear white in front of our eyes.
The fat present in milk also contributes to its color. The small particles of fat present in milk scatter the light further. This is why full cream milk looks thicker and whiter, whereas toned or skimmed milk looks a little lighter.
You must have noticed that buffalo’s milk is whiter and slightly yellowish, whereas cow’s milk appears lighter in comparison. The reason for this is that the amount of fat and casein in cow’s milk is less than that of buffalo’s milk. At the same time, due to the high fat content in buffalo milk, it appears slightly yellowish.
