Prepare the batter:
Mix semolina and curd in a bowl. Make a thick batter by adding some water and keep it covered for 5 minutes so that the semolina swells properly.
Mix vegetables:
Now add corn, onion, capsicum, green chilli and ginger. Add salt and green coriander and mix well.
Fluff the batter:
Just before making the appe, add eno to the batter and add some water and mix gently. This will make the appe soft and spongy.
Cook Appe:
Heat the appe pan and add some oil to each dish. Add the batter with a spoon, cover and cook on medium flame for 2-3 minutes.
Flip and bake:
When one side becomes golden, turn it over and cook until the other side also becomes crispy.
Take out the prepared appe in a plate and serve hot with green chutney or tomato sauce.
