Material

Ripe mango – 2 (remove pulp)
Milk – 1 liter
Rice – 2 tbsp (wash and soak for 30 minutes)
Sugar – 4-5 tbsp
Cardamom powder – ½ tsp
Cashews, almonds, pistachios – chopped (2-3 tbsp)
Saffron – 6-7 threads

Method

  1. Boil milk in a heavy bottomed vessel. When milk starts boiling, add soaked rice.
  2. Cook on low flame till the rice gets cooked well. Keep stirring occasionally so that the milk does not stick to the bottom.
  3. When the rice is cooked, add sugar and chopped nuts to it. Cook for 5-7 more minutes. Now turn off the gas and let the kheer cool completely. (This step is very important)
  4. When the kheer cools down, add mango pulp and cardamom powder to it and mix well. Keep in mind that adding mango to hot kheer may curdle the milk.
  5. Cool the kheer in the refrigerator for 1-2 hours. Sprinkle saffron and dry fruits on top and serve chilled.

tips

For more taste, use Alphonso or Kesar Mango. If the kheer becomes too thick, you can adjust the consistency by adding some cold milk. While serving, if you add small pieces of mango on top then the taste will increase further.
