Introduction to Lauki Dahi Tikhari

Dry bottle gourd vegetable is eaten with dal-rice or roti-paratha with great relish. But sometimes one gets bored with the same type of vegetable. In such a situation, I feel like trying something new. Generally people make dry bottle gourd vegetable or kofta. But if you are tired of these, ‘Lauki Dahi Tikhari’ is a great alternative. Material

Oil- 1 tbsp

Mustard – 1 tsp

Cumin- 1/2 tsp

Asafoetida- 1/4 tsp

Fennel- 1 tsp

Curry leaves – 10–12

Green chilli – 1 tsp (finely chopped)

Garlic paste- 1 tsp

Onion- 1/4 cup (finely chopped)

Bottle gourd- 1/2 cup (grated)

Salt- as per taste

Red chilli powder- 1/2 tsp

Turmeric powder- 1/4 tsp

Coriander powder- 1/2 tsp

Cumin powder- 1/2 tsp

Curd- 1 cup

Green Coriander – 2 tbsp

Method to make Lauki Dahi Tikhaari

First, heat a non-stick pan on medium flame. Add cumin seeds and mustard seeds and let them crackle. Then add fennel, asafoetida and curry leaves and fry. After this, add garlic and green chilli paste and fry until the aroma starts coming out. Now add finely chopped onion and fry for a few seconds. Then add grated bottle gourd and mix well and add red chili powder, turmeric, salt, cumin powder and coriander powder and mix all the ingredients well.

Now turn off the gas and leave the mixture to cool for a while. Then add curd to it and mix well so that all the spices mix well. Finally, before serving, add finely chopped coriander.
