First of all, wash the poha lightly with water and filter it. Keep in mind that the poha should not be too wet. Now add turmeric, salt and a little sugar to it and keep it for a few minutes.
After this, heat oil in a pan and add mustard seeds, curry leaves, green chillies and peanuts and fry them. Then add onion and cook until it turns light pink.
Now put the prepared poha in the pan and mix gently. Let it cook on low flame for 2-3 minutes so that the spices mix well.
The special identity of Indori Poha is its topping. Add sev, pomegranate seeds, green coriander and lemon juice over the prepared poha. If you want, you can also serve Jalebi along with it.
