Tezzbuzz Desk- Daulat Ki Chaat, found in the streets of Old Delhi, is famous all over the world for its unique taste and soft texture. This special sweet available in the winter season melts as soon as it goes in the mouth. In many places it is also known as Malai Makhan or Nimish.
To make Daulat ki Chaat in the traditional way, milk is kept in cold air and dew overnight, due to which a light and fluffy foam is formed in it. However, by adopting some easy methods you can taste it at home also.
First of all, put milk in a pan and cook it on low flame. Boil the milk until it reduces to almost half. After this let the milk cool completely.
Now add fresh cream, powdered sugar, cardamom powder and saffron milk to cold milk and mix well.
Beat this mixture well. If you have an electric beater then use it, it will prepare more light and soft foam in Daulat Ki Chaat.
Now cover this mixture and keep it in the refrigerator for about 8 hours. During winter season, it can also be kept in a cold place overnight, due to which its taste and texture improves.
After it cools down, beat the mixture again for about 10 minutes, until it becomes completely light and foamy.
Take out the prepared Daulat Chaat in a bowl and garnish with pistachios, almonds, saffron, rose petals and silver work.
