List of Ingredients
Sabudana – 1 cup
Cumin seeds – 1/2 teaspoon
Curry leaves – 8 to 10 leaves
Ginger – 1 small piece, finely chopped
Green chilies – 1 to 2
Boiled potatoes – 2, mashed or diced
Peanuts – 2 teaspoons
Rock salt – to taste
Coriander and lemon – for garnishing
Step by Step Sabudana Khichdi Recipe
Step 1 – To make Sabudana Khichdi, first place the sabudana in a large bowl and let it soak. A wide bowl is best, as sabudana swells and needs space. If you wish, you can remove the starch from the sabudana by squeezing it 2-3 times, changing the water. This removes the starch and makes the sabudana appear more fluffy. Now soak the sabudana in 2-3 cups of water and let it soak for about 4 hours.
Step 2 – When the sabudana becomes soft, drain the water and leave it aside. Now take a pan or a wok. First, add peanuts and lightly fry them. Now, remove the peanuts and place them in a separate plate. Now, add pure ghee to the pan and heat it. Add cumin seeds and curry leaves and cook. Add finely chopped ginger and chopped green chilies and fry for a few minutes.
Step 3 – Now, add chopped boiled potatoes to the pan. Stir and fry the potatoes for two-three minutes. When the potatoes turn light brown, add the soaked and drained sabudana. Now, reduce the heat to low. Then add peanuts, rock salt, and a little sugar if desired.
Step 4 – Increase the heat and cook the sabudana, stirring occasionally to prevent it from sticking. Overcooking sabudana can cause it to stick to the pan. Finally, add lemon juice and chopped coriander and serve sabudana khichdi. You will surely enjoy its taste. This khichdi also helps alleviate weakness.
